It's late morning here as I am writing, and I just finished up making a batch of my favorite granola! I received this recipe from Youtuber Cambria Joy and had to share it with you! :) I have modified the ingredients slightly and often mix-and-match with what I have on hand as well. It's quick + easy, grain-free goodness— naturally sweetened, nutty, crunchy, and full of nutrients!
Eating grain-free can reduce inflammation in the body and leave you feeling lighter than eating traditional grains. This granola includes healthy fats from nuts and coconut which will support your energy levels, cinnamon which regulates blood sugar or cocoa that is rich in antioxidants (depending on your flavor choice), and maple syrup which contains vitamins and minerals as a better-for-you, natural sweetener.
My husband really likes it too, and I have been making it weekly to keep it stocked in our pantry. I really enjoy it in the mornings with coconut or cashew yogurt with fresh fruit, but we often grab handfuls throughout the day as well!
Ingredients:
1/2 c. almond flour
1/2 tsp salt
around 1/2 tsp cinnamon (or 3 tsp cocoa, which is also delicious— feel free to add more or less of these to taste)
1/4 c. maple syrup
1/2 tsp pure vanilla extract (I normally use a cap-full)
1 1/2 c. chopped nuts (your choice)
First, mix together the almond flour with the coconut, salt, cinnamon, maple syrup, + vanilla. Then, mix in your choice of nuts (I used pecans today, pictured above) until well combined. Once all of the ingredients are combined, transfer to a baking sheet lined with parchment paper. Bake at 325 degrees for 8 minutes. At the 8 minute mark, stir the granola and return to the oven for another 5 minutes to finish. After the 13 minutes of baking, the granola should form some nice clusters and be slightly crunchy and golden! Allow the granola to cool completely before storing in an air-tight container for keeping at room temperature.
My 2 favorite ways to enjoy it: with yogurt + fruit in a parfait or with almond milk— I get so excited when eating this granola with milk because it tastes like Honey Bunches of Oats!! A favorite cereal from my childhood! This recipe encompasses a similar flavor but is less processed with more wholesome ingredients.
